VIETNAMESE CUISINE:

There are three different cuisines in Vietnam. In the South, which enjoys a tropical climate, coconuts, lemongrass, chilli, pineapple and the beautiful fruit of the Mekong delta will be found. Southern cuisine is often sweet and sour, as for instance the famous tart fish soup.

In the central part of the country, it will often be spicy, with fish and shellfish. The North, with its four seasons, will offer a country-style cuisine, using vegetables and herbs and freshwater fish. All the three are connected by a common thread- nuoc mam. This cuisine has its own theories and ingredients, which make it quite different from Western or other Asian cuisines.

Vietnamese cuisine is also very much structured, and has its very own characteristics: short marinades, no butter, no cream nor spirits, no oil for salads. Very little salt is used, sometimes non at all. The herbs used for each dish are indented at the last moment, they are not cooked and thus retain all their flavors. Pepper is added at the last minute, cooking times are short and fast, and vegetables are served crisp.

Day 2 :  Hanoi Cooking Class – Half Day  ( Breakfast , Lunch )

8h00 am your culinary journey begins with a visit to the local ‘wet market’ to learn about the fresh Vietnamese produce that is used in everyday cooking. Continue onto the home of a ‘true Hanoian’ who learned her culinary skills from her grandmother, a former chef who once served the French elite in the 1930’s. See how to prepare and cook authentic northern Vietnamese cuisine before sitting down to enjoy a delightful meal. This afternoon, visit Ba Dinh Square to view Ho Chi Minh’s Mausoleum, his wooden cottage and the One Pillar Pagoda, the Buddhist Tran Quoc Pagoda and Quan Thanh Temple. This evening, dine at ‘La Verticale’, set in a charming 1930s villa. Meet the acclaimed Chef and owner Didier Corlou, who has lived in Vietnam for 15 years and has a clear love affair and appreciation of Vietnamese food.

Day 3: Hanoi – Halong Bay explore  ( Lunch , Dinner )

8h00 am pick up at your hotel to go to Halong Bay , stop on the way in Hai Duong province

12h00: Arrive in Halong tourist wharf, check in our Boat and enjoy welcome drink then check-in registration.

12h45: Start cruise

13h00: Lunch with fresh seafood is served while the junk heading out the bay

13h30: A fantastic cruise in Halong bay, visit Dinh Huong Island, fishing villages, Ga Choi Island, Dog Island, Sail Island, and explore the mystery of Sung Sot cave.

16h30: Enjoying swimming, sun bathing at TiTop Island or climbing up the peak for a breath-taking panorama view of Halong Long bay.

11:00- 13:00: Lunch with dishes you have learned at Y Thao Garden Restaurant.

 Day 8 :  Hoi an Cooking Class ( Breakfast , Lunch )

 We start to pick you up at 8 Am at your hotel take you to our meeting point.

  Visit Hoi An’s colourful market, and experience the amazing sights, sounds and aromas of this busy market. We will have the opportunity to interact with the local sellers and purchase some of the ingredients to be used in the cooking lesson later.

 We board the Red Bridge boat for a leisurely cruise (25 minutes) along the Hoi An river to the Red Bridge Cooking School. This is a chance to view local river life, so make sure your camera is handy.

 On arrival, we have a chance to explore the cooking school’s herb and vegetable garden, before learning about some of  Hoi An’s and Vietnam’s well-known dishes. The cooking class is an interesting and fun way to learn about the local cuisine - the class runs for about an hour and 15 minutes, and includes demonstrations from the school’s chefs as well as the chance for us to help prepare some dishes. Included in the demonstration is a brief introduction to Vietnamese food carving (plate decoration)
